Coffee

Roasted small, priced in the open.

We roast in small batches, a few days before it reaches you. What we look for is not rarity — it is something good enough to be worth someone’s first hour of the day.

The green price

The figure beside each coffee is what we paid per pound for it green, before we roasted anything. We publish it because coffee is one of the few things people buy without any idea where the money stops.

Cheap coffee is cheap because somebody upstream absorbed the cost, and it is almost never the roaster. We would rather pay more and be able to say so.

We buy through importers with a real record of traceability, which means we can name the region, the cooperative and often the farm.

How we roast

Tov jars on a wooden riser in a shop: Costa Rica Tarrazu, Colombia Decaf, Ethiopia Worka Sakaro and Uganda Bugisu, each with a colored label, beside a card reading Please Return Empty Jars.
The shelf, and the jars that come back

Small batches

Roasted against what is actually being sold that week, so nothing sits in a warehouse losing the thing you paid for.

Toward the light

Most of what we roast sits light to medium — far enough to be sweet and round, not so far that the origin disappears under the roast.

In jars, not bags

Glass keeps coffee well and it keeps coming back. Ours comes in jars — glass if you buy it in person, and those come back for a discount on the next fill. Shipped orders go in plastic.

Lots rotate

Harvests are seasonal and we buy small, so the list changes through the year. If one of them is your favorite, say so before it goes.
